Recipe – Ghee Lauki / Bottle Gourd with clarified butter

Serves: 4

Ingredients

  • Lauki (Bottle Gourd): ½ of a medium sized
  • Water: ¼ Cup
  • Salt: ½ Teaspoon or to taste
  • Sugar: 1 teaspoon (optional)
  • Black pepper powder: ½ Teaspoon
  • Ginger: ½ Teaspoon, chopped or crushed or paste
  • Green Chili: 1, chopped or crushed or paste
  • Ghee (clarified butter): 2 tablespoons
  • Cumin seeds: ½ Teaspoon

Method

  • Peel the lauki and cut into small pieces. Take out the seeds if any. Wash in water and drain.
  • Heat ghee in a pressure cooker, add cumin seeds, when it changes color add ginger and green chili.
  • Sauté for 1 minute.
  • Add lauki pieces, salt and black pepper powder. Sauté for 2 minutes.
  • Add water and sugar. Let it boil.
  • Lower the heat and cover the lid of the pressure cooker.
  • Cook till 2 whistles in low heat.
