Recipe – Almond Milk / Badam Dudh

Prep Time: 4-5 hours

Cook time: 10 Minutes

Serves: 4


  • Milk: 4 cups
  • Almonds (Badam): 30-32
  • Elaichi Powder(Cardamom): ¼ Teaspoon
  • Saffron Strands (Kesar): 4-5 Threads
  • Sugar: 1 1/2 tablespoon or to taste


  • Soak the badam in water for 4-5 hours. Drain the water and peel the badam skin.
  • Blend the peeled badam in smooth paste using 1 tablespoon milk.
  • Boil 4 cup of milk in a pot.
  • once it started boiling, lower the heat. add the badam paste, elaichi powder, sugar and saffron strands.
  • Stir well and simmer it for another 3-4 minutes or till sugar dissolves.
  • Pour in cup/glass and serve hot.
  • Or, let it cool completely. then refrigerate it and serve cool.

Recipe – Coriander Chutney/ Dhaniya patti ki chutney

  • Fresh coriander leaves chopped: 2 cups, washed
  • Cumin Seeds: ½ Teaspoon
  • Green chilies chopped: 2
  • Ginger: chopped, 1 teaspoon
  • Onion: ½ of a medium sized, chopped
  • Tomato: ½ of a medium sized, chopped
  • Peanuts: 10 pieces
  • Salt: ½ Teaspoon to taste
  • Coriander powder: 1/2 tablespoon
  • Lemon juice: 1 teaspoon
  • Water: 1/4th Cup or as required


  • Blend all the ingredients in a blender to a smooth paste.
  • Adjust water to get the required consistency.

Recipe – Sweet Corn Fry / Sweet Corn Bhel

Prep Time: 5 Minutes

Cook Time: 10 Minutes

Serves: 2


  • Sweet Corn kernels: 1 cup
  • Water: as required
  • Butter: ½ tablespoon
  • Onion: 1 medium, chopped
  • Tomato: 1 medium, chopped
  • Green chili: ½ Teaspoon, finely chopped
  • Salt: 1 teaspoon or to taste
  • Black pepper powder: ½ teaspoon
  • Coriander leaves: 1 tablespoon
  • Lemon juice: 1 teaspoon


    • Boil 4-5 cups water. Add sweet corn and let it boil for 5 minutes. Drain the water.
    • Heat oil in a pan. Sauté onion for 2 minutes.
    • Add the tomato and green chili. Sauté for 2 minutes.
    • Add the sweet corn, salt, black pepper powder. Sauté for 3-4 minutes.
    • Turn off the heat.
    • Add lemon juice and coriander leaves.
    • Serve hot.


Recipe – Thai Iced Tea


Prep Time: 30 minutes

Cook Time: 10 minutes

Serves: 4 cups


  • Water: 4 ½ Cup
  • Sweet condensed milk / milkmaid: 4 tablespoons
  • Tea: 4 Teaspoon or 4 tea bags
  • Sugar: 2 tablespoons
  • Cloves: 2
  • Cardamoms: 2
  • Star Anise: 1
  • Ice cubes: 8


  • Boil water, tea, cloves, cardamoms and star anise for 4-5 minutes.
  • Add sugar and boil for 2-3 minutes again. Turn off the heat.
  • Sieve and pour Tea in another container. Let it cool completely for 30 minutes.
  • Add 2 ice cubes and 1 tablespoon condensed milk in each of the 4 cups/glasses.
  • Stir well and serve.

Cook’s Note:

  • You may use tea bags. Boil water with cloves, cardamoms and star anise. Sieve and pour in another container. Add tea bags. Remove the tea bags after sometime.
  • You may use coconut milk instead of sweet condensed milk.

Recipe – Baked Broccoli and Potato

Prep Time: 15 Minutes

Cook Time: 30 Minutes

Serves: 4


  • Broccoli: Washed, trimmed and cut into small pieces, 2 cup
  • Potato: Washed and cut into small pieces, 1 cup
  • Cooking Oil: 2 Teaspoon
  • Salt: 1 teaspoon or to taste
  • Black Pepper powder: 1 teaspoon
  • Dried Oregano: 1 teaspoon
  • Lemon Juice: 4-5 drops


  • Preheat the oven to 375 F / 190 C
  • Mix all the ingredients
  • Place the ingredients on the baking tray over a baking sheet.
  • Cover the tray with aluminum foil paper.
  • Prick the aluminum foil’s 1 or 2 places with a fork.
  • Bake for 20 minutes.
  • Take out and remove the cover.
  • Bake again for 10-15 minutes.

Cook’s Note

  • Depending on the broccoli and Potato freshness and size of the pieces, baking time may vary. So, check after 20 minutes, if those are cooked or need to be baked for another 5-10 minutes.

Recipe: Black Bean Patty Burger


Prep Time: 20 Minutes

Cook Time: 40 Minutes

Serves: 6


For the Black Bean Pattie:

  • Black bean: 1 cup
  • Potato: 2 medium sized
  • Ginger green chili, finely chopped or paste: 1 Teaspoon
  • Chat masala or garam masala: 1 teaspoon
  • Salt: ½ tablespoon or to taste
  • Lemon juice: a few drops
  • Corn flour: ¼ Cup
  • Water: ¼ cup
  • Bread Crumbs: ¼ Cup
  • Oil: As need to deep fry or shallow fry the cutlets

Other ingredients:

  • Burger Bread Buns: 6
  • Butter: 1 tablespoon or as required to toast the sandwich
  • Sliced Cheese: 6
  • Onion: 1 medium sized
  • Tomato: 1 medium sized
  • Green bell pepper (capsicum): 1 medium sized
  • Black Salt: ¼ teaspoon or to taste
  • Black pepper powder (kali mirch): 1/2 Teaspoon
  • Chat Masala Powder: 1/2 Teaspoon
  • Mayonnaise: 3 tablespoons
  • Tomato sauce: 3 Tablespoon
  • Lettuce salad leaves: 6 pieces, little bigger than the burger size


For the black bean patty:

  • Wash the black bean 2-3 times and soak in water for 5-6 hours.
  • Boil the black beans with salt and water.
  • Drain the excess water.
  • Mash the black beans.
  • Boil potato, peel and mash. Add it in the mashed black beans.
  • Add ginger, chili, salt, chat masala, lemon juice and mix well.
  • Mix corn flour and water in a bowl and make a smooth batter. Keep it aside.
  • Take bread crumbs in a plate.
  • Divide the bean potato mix into 6 equal portions. Roll them into balls. Press each ball to make a thick circle same size as the burger bread bun size.
  • Now, dip the prepared cutlet into the corn flour mix and then drop it gently into bread crumbs. Cutlet should be well coated with bread crumbs on both the sides.
  • Deep fry in a pan or shallow fry the cutlets on a tawa.

For the burger dressing:

  • Cut the onion, tomato, green bell pepper into thin circles.

For the Burger assembling:

    • Divide each burger bun into 2 halves and roast both sides of each halves on a tawa using butter until light brown.
    • Take one half of the bun, spread ½ tablespoon tomato sauce.
    • Place a bean patty on top of it.
    • Place a lettuce leaf piece and 1 circle of each onion, tomato and bell pepper.
    • Sprinkle some black salt, black pepper powder and chat masala.
    • Dip the cheese slice in little warm water and place on the patty.
    • Take another half of the bun, spread little mayonnaise and cover the top of it.
    • Likewise make all the 6 burgers and serve.
