Recipe – White Sauce Vegetable Pasta

Serves: 4


  • Pasta: 3 cups
  • Carrot: Peeled and chopped into small pieces, 1 Cup
  • Green beans: Trimmed and chopped into small pieces, ½ Cup
  • Broccoli: Chopped into pieces, 1 Cup
  • Bell Pepper: Chopped into small pieces, length wise, 1/2 Cup
  • Water: As required
  • Butter: 1 tablespoon
  • Garlic: ½ tablespoon, chopped
  • Onion: 1 medium sized, cut into lengthwise
  • Salt: 1 1/2 Teaspoon or as required
  • Black Pepper Powder: 2 Teaspoon
  • Dried Oregano: 1 Teaspoon
  • Parmesan Cheese: 1 Tablespoon

For the white sauce:

  • Butter: 1 tablespoon
  • Plain Flour (Maida): 2 tablespoons
  • Warm Milk: 1 Cup
  • Water:1 cup
  • Salt: 1 Teaspoon
  • Shredded Cheddar Cheese: ¼ cup


  • In a sauce pan, add 1 tablespoon butter.
  • Add flour and whisk constantly for 3 minutes.
  • Add warm milk, water and salt. Whisk constantly for 5 minutes or until thickened. Turn off the heat.
  • Boil 7-8 cups of water in a pot. Once it starts to boil, add pasta, carrot and green beans. Boil for 10-12 minutes or until cooked. Drain excess water and keep aside.
  • Heat 1 tablespoon butter in a big pot. Sauté garlic and onion for 2 minutes or till onions are transparent, not brown,
  • Add all bell pepper and broccoli and sauté for 3 minutes.
  • Add boiled pasta and vegetables, salt, black pepper powder, dried oregano, white sauce.
  • Toss well and cover it for 5 minutes.
  • Turn off the heat.
  • Sprinkle parmesan cheese and serve hot.
