Recipe – Thin Crust Pizza / Veggie Thin Crust Pizza

Serves: 2 Medium Pizza

Ingredients

For Pizza base:

  • Plain flour (Maida): 1 Cup
  • Salt: 1 Teaspoon
  • Sugar: 2 Teaspoon
  • Oil: 1 ½ Tablespoon
  • Active dry yeast: 1/2 Teaspoon
  • Water: as required

For the Pizza sauce:

  • Oil / Butter: 1 ½ Tablespoon
  • Onion: 1 medium sized, chopped
  • Tomato: 2 medium sized, chopped
  • Green/red bell pepper: 1, chopped
  • Red Dried Chili: 1
  • Green Chili: 1, finely chopped or crushed
  • Ginger: 1 Teaspoon, finely chopped or crushed
  • Garlic: 1 Teaspoon, finely chopped or crushed
  • Dry Oregano: 1 Teaspoon
  • Basil Leaves: 6-7, finely chopped
  • Salt: ½ Teaspoon
  • Black Pepper powder: 1 teaspoon
  • Corn Flour: 1 Tablespoon
  • Water: ¼ Cup

For the Topping:

  • Cheese: 1 Cup, grated or small pieces
  • Salt: ½ Teaspoon or to taste
  • Black Pepper powder: ½ teaspoon
  • Dry Oregano: ½ Teaspoon
  • Veggie toppings (any combinations of the following)
    • Onion: 1 medium sized, finely chopped
    • Tomato: 1 medium sized, finely chopped
    • Green Bell Pepper: 1 medium sized, finely chopped
    • Spinach Leaves: 8-10
    • Broccoli: 7-8 florets
    • Mushroom: 10-12 half pieces
    • Sweet corn kernels: 2 Tablespoon
    • Black Olive: 10-12 round pieces

Method

For the Pizza Base

  • Mix yeast, salt, sugar and 1/4 cup warm water. keep it aside for 10 minutes.
  • Take flour in a bowl. Add the yeast mix. Mix well.
  • Using warm water, knead a soft dough.
  • Add oil and knead again.
  • Cover the dough with a damp cloth and keep aside for 5-6 hours. It will double in size.
  • Remove the cover and knead again for 4-5 minutes.
  • Divide the dough into 2 equal portions and roll into balls.
  • Roll each ball into 8-10 inch diameter circles, approx. 1/8-inch thick. Sprinkle some flour or use oil if it is sticky while rolling to a circle.
  • Preheat the oven to at 180 C / 350 F and bake for 15 minutes. Take them out.

For the Pizza Sauce

  • Heat oil in a pan. Sauté dried red chili, ginger, garlic and onion till onions are light golden brown.
  • Add tomato, green chili, bell pepper, dried oregano, basil leaves, salt, black pepper powder and sauté till tomatoes are cooked.
  • Turn of the heat and let it cool.
  • Blend this mixture to a smooth paste.
  • Heat ½ Tablespoon oil in another small pan. Sauté corn flour for 1 minute and add ¼ cup of water. Boil it for 2 minutes.
  • Add the blended paste and cook for another 2 minutes, stirring continuously. Turn off the heat and keep aside.

For the Toppings

  • Mix the veggies with salt, black pepper powder and oregano. Toss well and keep aside.
  • Grate the cheese and keep aside.

For Assembling

  • Take one of the baked Pizza base.
  • Spread half of the pizza sauce on one side of the base.
  • Add half of the vegetable toppings.
  • Add half of the grated cheese.
  • Assemble the other pizza as well.
  • Preheat the oven to 425-degree F or 200-degree C.
  • Bake for 15 minutes. Keep an eye and if cheese melts after sometime, take out and check if all done.

Recipe – Garlic Cheese Toast

Serves: 4

Ingredients

  • Bread slices: 8
  • Grated mozzarella cheese: 1 cup
  • Green chili: 1 teaspoon, finely chopped
  • Garlic: 2 teaspoons, finely chopped
  • Fresh coriander leaves: 1 tablespoon, finely chopped
  • Butter: as required to toast the breads
  • Salt: 1 teaspoon or to taste
  • Black pepper powder or crushed: 1 teaspoon
  • Dried oregano: 1 teaspoon

Method

  • Heat 1 teaspoon butter in a small pan. Saute the garlic for 2 minutes. Add green chili and coriander leaves and saute for another 1 minute.
  • Melt the butter and spread evenly on both sides of each of the bread slices.
  • Toast them slightly (not brown, just slight crispy) using toaster or on a tawa in medium flame.
  • Take them out, cut diagonally each slice into 2 triangles.
  • On one side of each triangle, spread 1 tablespoon cheese, spread little sautéed-garlic-chilli and sprinkle some salt, black pepper powder and oregano.
  • Preheat the oven to 180 C / 350 F.
  • Place the bread slices on a baking tray (cheese filling should be facing up)
  • Bake them for 7-8 minutes or till the cheese melts properly.
  • If you are not using oven and cooking on tawa, then place the triangle pieces on tawa, lower the heat to slow and cover the tawa with a lid until cheese melts. Keep an eye on the bottom side of the slices as if you increase the heat, it may burn from bottom but upper cheese layer will not melt.
  • Serve hot.

Recipe – Blueberry and Strawberry Muffins

Serves: 12 muffins

Ingredients

  • All Purpose flour or Plain Flour (Maida): 1 ½ cup + 1 teaspoon
  • Fresh Blueberry: 1/2 cup
  • Fresh Strawberry: 1/2 cup, trimmed and chopped into small pieces
  • Powdered Sugar: ½ cup
  • Baking powder: 2 teaspoons
  • Baking Soda: 1 teaspoon
  • Vanilla essence: 1/2 teaspoon
  • Salt: ½ teaspoon
  • Oil: 1/4 cup
  • White Vinegar / lemon juice: 1 tablespoon
  • Milk: 1 cup

Method

  • Preheat the oven to 375-degree F or 190-degree C
  • Wash the berries and pat them dry using a cotton cloth or napkin. Chop the strawberry into small pieces.
  • In a bowl add the berries and sprinkle 1 teaspoon flour. Gently coat the flour on berries all around nicely. If we do not do so, berries would come down to the bottom while baking.
  • Sieve, all the dry ingredients, flour, sugar, baking powder, baking soda, salt in to a bowl. Mix well and keep aside.
  • Whisk milk and vinegar. Add Oil and mix again.
  • Now add the dry mix slowly in to the milk-oil liquid. Mix gently. You do not have to blend or beat the batter. Mixing gently would be enough. Just check that there are no lumps or air pocket.
  • Add the coated berries and vanilla essence. Fold gently and evenly.
  • Line a muffin tray with muffin liner and fill 3/4 of each muffin cup.
  • Bake for 25 minutes or until a tooth pick inserted comes out clean.
  • Take out all the muffins and sprinkle some powdered sugar.
  • You may decorate it with whipped cream.

Cook’s Note

  • You may use soy milk or rice milk for a vegan berry muffin recipe.

 

Recipe – Chili Cheese Toast

Recipe – Baked Brussels Sprouts

Serves: 4

Ingredients

  • Brussels Sprouts: 18-20, Washed, trimmed and cut into halves,
  • Oil / Butter: 2 Teaspoon
  • Salt: 1 ½ teaspoon or to taste
  • Black Pepper powder: 1/2 teaspoon
  • Red chili powder: 1/4 teaspoon
  • Dried Oregano: 1 teaspoon
  • Garlic powder: ½ teaspoon
  • Lemon Juice: 4-5 drops

Method

  • Preheat the oven to 350-degree F or 180-degree C
  • Mix all the ingredients
  • Place a baking sheet on the baking tray. (Optional)
  • Place the ingredients on the baking tray.
  • Cover the tray with a lid or aluminum foil paper.
  • Prick the foil paper’s 1 or 2 places with a fork.
  • Bake for 15 minutes.
  • Take out and remove the cover.
  • Bake again for 15 minutes or till cooked.

 

Recipe – Baked Broccoli and Potato

Ingredients

  • Broccoli: Washed, trimmed and cut into small pieces, 2 cup
  • Potato: Washed and cut into small pieces, 1 cup
  • Cooking Oil: 2 Teaspoon
  • Salt: 1 teaspoon or to taste
  • Black Pepper powder: 1 teaspoon
  • Dried Oregano: 1 teaspoon
  • Lemon Juice: 4-5 drops

Method

  • Preheat the oven to 375 F / 190 C
  • Mix all the ingredients
  • Place the ingredients on the baking tray over a baking sheet.
  • Cover the tray with aluminum foil paper.
  • Prick the aluminum foil’s 1 or 2 places with a fork.
  • Bake for 20 minutes.
  • Take out and remove the cover.
  • Bake again for 10-15 minutes.

Cook’s Note

  • Depending on the broccoli and Potato freshness and size of the pieces, baking time may vary. So, check after 20 minutes, if those are cooked or need to be baked for another 5-10 minutes.

Recipe – Mixed Baked Potatoes

Serves: 4

Ingredients

  • Potato: 2, medium sized
  • Sweet Potato: 1, medium size
  • Melted butter / Oil: ½ Tablespoon
  • Salt: 1 Teaspoon or as required
  • Black Pepper powder: ½ Teaspoon
  • Dried Oregano: ½ Teaspoon
  • Red chili powder: ¼ teaspoon

Method

  • Preheat the oven to 400-degree F or 200-degree C.
  • Trim the sweet potato edges and cut into 1 inch cube pieces. Do not peel it.
  • Cut the potato into 1 inch cube pieces. Do not Peel it.
  • Wash them and drain the water.
  • In a baking tray place a baking sheet.
  • Add the potato pieces, butter/oil, salt, black pepper powder, dried oregano, red chili powder and whisk well. All potato pieces should be evenly coated with the mix.
  • Cover the baking tray with an aluminum foil.
  • Prick 2-3 places on the aluminum foil using a knife or fork.
  • Bake for 15 minutes. Take out, remove the aluminum cover and bake again without cover for 10 minutes or till it gets cooked.
  • Serve.

Cook’s Note

  • You may cook the potatoes on cook top as well.
  • You may add finely chopped garlic pieces or garlic powder.
  • You may add grated cheese. Once potatoes are almost baked (80%), add cheese and bake again.
