Recipe – Paneer Manchurian

Serves: 4

Ingredients

For the paneer fries:

  • Paneer (Cottage Cheese): 300 grams (2/3 lbs)
  • Corn Flour (Corn starch): ½ cup
  • Water: ¼ cup or as required
  • Salt: 1 teaspoon or to taste
  • Black pepper powder: 1/4 teaspoon
  • Cooking oil: as required for frying

For the sauce:

  • Oil: 1 tablespoon
  • Onion: 1 small, finely chopped
  • Green bell pepper: 1/2, finely chopped
  • Ginger: ½ teaspoon, finely chopped
  • Garlic: ½ teaspoon, finely chopped
  • Green chili: ½ teaspoon. finely chopped
  • Tomato sauce: 1 tablespoon
  • Soya sauce: ½ tablespoon
  • Vinegar: ¼ tablespoon
  • Chili sauce: ¼ tablespoon
  • Salt: ½ teaspoon
  • Black pepper powder: ½ teaspoon

For Garnish:

  • Fresh cilantro (coriander leaves): 1 tablespoon
  • Spring onion: ½ tablespoon, finely chopped

Method

  • Cut the paneer bar into 1*1/2*1/4-inch rectangular pieces or square cubes.
  • Mix corn flour, salt and black pepper powder in a bowl. Add water and make a smooth thick batter.
  • Heat oil for deep fry.
  • Now dip each paneer piece into the corn flour batter and gently coat all around.
  • Deep fry them in hot oil until both sides are golden brown and crispy.
  • Take them out on a kitchen napkin. Keep aside.
  • Heat another frying pan.
  • Saute onion, ginger, garlic, green chili, bell pepper for 3-4 minutes.
  • Add tomato sauce, soya sauce, vinegar, chili sauce, salt, black pepper powder and mix well. Cook for 1 minute.
  • Add the fried paneer pieces.
  • Gently fold the sauce all over the paneer pieces.
  • Cook for 2-3 minutes.
  • Turn off the heat.
  • Garnish with coriander leaves and spring onions.

Recipe – Chinese Fried Rice

Cooking Time: 20 Minutes

Serves: 4

Ingredients

  • White rice: 1 ½ cup
  • Water: 4 Cup or as required
  • Oil: 2 Tablespoon
  • Onion: 1, Chopped into thin slices
  • Ginger: Finely chopped, crushed or paste, 1 teaspoon
  • Garlic: Finely chopped, crushed or paste, 1 teaspoon
  • Green chili: Finely chopped, crushed or paste, ½ teaspoon
  • Carrots: Chopped into very fine pieces, ¼ Cup
  • Green Beans: Chopped into very fine pieces, ¼ Cup
  • Peas: ¼ Cup
  • Cabbage: ½ cup, Chopped into very fine pieces
  • Green Bell Pepper: 1, Chopped into small thin slices
  • Salt: 2 Teaspoon or to taste
  • Black Pepper Powder: 1/2 Teaspoon
  • Soya Sauce: 2 tablespoons
  • Fresh Coriander Leaves: Chopped, 2 Tablespoon
  • Fresh Mint leaves: 4-5, finely chopped
  • Spring Onion: green portion, chopped, 1 tablespoon

Method

  • Wash rice 2-3 times and soak it in water for 5 minutes. Drain the water.
  • Boil 2 ½ cups of water and once it starts to boil add the drained water. Cover and cook until rice is done.
  • Heat Oil in a frying a pan.
  • Add onion, ginger, garlic and green chili. Sauté till onions are transparent, not brown.
  • Add carrots, beans, peas, cabbage, bell pepper and stir. Cover and cook till 80% cooked. Vegetables should not be over cooked. It should be little crispy.
  • Add salt, black pepper powder and soya sauce. Stir well.
  • Add the cooked rice. Stir again for 2-3 minutes. Turn off the heat.
  • Garnish with chopped coriander and mint leaves and spring onions.

 

Recipe – Mushroom in Chinese Gravy

Ingredients

  • Mushrooms: 2 cups or approx. 450 grams
  • Onion: 1 medium sized
  • Tomato: 1 medium sized
  • Green Bell Pepper: ½ of a medium sized
  • Ginger: finely chopped, 1 Teaspoon
  • Garlic: Finely Chopped, 1 Teaspoon
  • Green Chili: Finely chopped, 1 Teaspoon
  • Sesame Oil / cooking oil: ½ Tablespoon
  • Cumin Seeds: 1 Teaspoon
  • Salt: ½ Teaspoon or to taste
  • Black Pepper powder: ½ Teaspoon
  • Cinnamon Powder: 1 Teaspoon
  • Soya Sauce: 1 tablespoon
  • White Vinegar: ½ teaspoon
  • Tomato sauce: 1 tablespoon
  • Water: ¼ cup or as required
  • Coriander Leaves: Finely chopped, 1 Tablespoon
  • Lemon Juice: A few drops
  • Spring onion: 1 tablespoon, finely chopped
  • White sesame seeds: 1 teaspoon

Method

  • Clean the mushrooms and each into 4 pieces.
  • Cut onion, bell pepper, tomato lengthwise into 1 inch pieces.
  • Heat oil in a pan and add cumin seeds, when it changes color, add onion, ginger and garlic. Stir and sauté till onion turns transparent, not brown.
  • Add bell pepper. Stir for 3 minutes in medium heat.
  • Add mushrooms, tomato and chilis. Stir, cover and cook in medium heat for 6-7 minutes or until mushroom is almost cooked (80%). While cooking, mushroom leaves water, so it will be enough to cook the mushrooms.
  • Add salt, black pepper powder, cinnamon powder, soya sauce, vinegar, tomato sauce and water. Stir well for 5-6 minutes or until mushrooms are done.
  • Remove heat and garnish with spring onion, coriander leaves, sesame seeds and a few drops of lemon juice.

Recipe – Vegetable Spaghetti / Vegetable Chowmein / Vegetable Noodles

Ingredients

  • Spaghetti / Noodles: 300 grams or 2 cups
  • Water: As required
  • Carrot: 1, peeled, washed and cut into small pieces
  • Green Beans: 5-6, washed and cut into small pieces
  • Bell pepper: 1, washed and cut into small pieces
  • Cabbage: 1/8 of a medium one, cut into small pieces
  • Green Peas: 1 tablespoon
  • Cauliflower: chopped, ¼ cup
  • Butter / Oil: 2 tablespoons
  • Garlic Cloves: 3-4, finely chopped or crushed
  • Onions: 1 medium, cut into small pieces
  • Salt: 1 ½ teaspoon or to taste
  • Black pepper powder: ½ teaspoon
  • Soy sauce: ½ tablespoon
  • Vinegar: 1/4 tablespoon
  • Chili Sauce: 1/4 tablespoon
  • Tomato Sauce: 1 Tablespoon

Method

  • Boil the vegetables, carrots, green beans, cabbage, green peas, cauliflower till 90% cooked.
  • Boil 7-8 cups of water with ½ teaspoon salt. Add Spaghetti / noodles. Boil for 10 minutes or till noodles and cooked. Drain and keep aside.
  • Heat 2 tablespoon of oil in a pan, add garlic gloves. Sauté for 30 seconds.
  • Add onion and sauté for 1 minute.
  • Add bell pepper and sauté for 3-4 minutes.
  • Add the drained noodles and boiled vegetables.
  • Add salt, black pepper powder, soy sauce, vinegar, chili sauce and tomato sauce. Toss well.
  • Sauté for 6-7 minutes.

 

Recipe – Chinese Stir Fry Mushroom

Ingredients

  • Mushrooms: 1 cup or approx. 250 gm
  • Onion: 1 medium sized
  • Tomato: 1 medium sized
  • Green Bell Pepper: ½ of a medium sized
  • Cabbage: finely chopped, ¼ cup
  • Ginger: finely chopped, 1 Teaspoon
  • Garlic: Finely Chopped, 1 Teaspoon
  • Green Chili: Finely chopped, 1 Teaspoon
  • Sesame Oil: 2 Tablespoon
  • Salt: 1 ½ Teaspoon or to taste
  • Black Pepper powder: ½ Teaspoon
  • Cinnamon Powder: 1 Teaspoon
  • Soya Sauce: 1 tablespoon
  • White Vinegar: ½ teaspoon
  • Tomato sauce: 1 tablespoon
  • Coriander Leaves: Finely chopped, 1 Tablespoon
  • Lemon Juice: A few drops
  • Spring onion: 1 tablespoon, finely chopped
  • White sesame seeds: 1 teaspoon

  • Add salt, black pepper powder, cinnamon powder, soya sauce, vinegar, tomato sauce. Stir well for 5-6 minutes or until mushrooms are done and water dried up.
  • Remove heat and garnish with spring onion, coriander leaves, sesame seeds and a few drops of lemon juice.

Recipe – Hakka Noodles / Chow Mein / Vegetable Chowmein

Ingredients

  • Noodles: 250 grams or 2 cups
  • Water: As required

  • Oil: 2 tablespoons
  • Garlic Cloves: 3-4, finely chopped or crushed
  • Salt: 1 teaspoon or to taste
  • Black pepper powder: ½ teaspoon
  • Soy sauce: ½ tablespoon
  • Vinegar: ½ tablespoon
  • Chili Sauce: ½ tablespoon
  • Tomato Sauce: 1 Tablespoon

Method

Cook’s Note

  • I have used green, yellow, red and orange bell pepper. You may use only green bell pepper.
